The quality of the food provided is admirable. However, the level of service is not consistently up to the mark as it ideally should be. Regrettably, they do not offer an authentic Italian carbonara made with pecorino cheese and guanciale. Their adaptation of this classic dish comprises of egg yolk and bacon, which doesn't quite capture the authenticity of the original recipe. While this may not deter some diners, those who have tasted the real deal might find this version lacking in comparison. The carbonara is a classic Italian dish, and using substitutes instead of the traditional ingredients can significantly alter its taste and texture. Therefore, it's disappointing that the establishment does not offer the dish in its true form. The food overall is of high standard, which may compensate to some extent for the lack in service quality. Despite this, it's essential for the staff to strive for consistency in providing excellent service to enhance the dining experience. Their version of carbonara, although not traditional, may still be palatable to some. Nonetheless, it's worth noting the importance of authenticity when it comes to classic dishes from any cuisine.
